Besides various temple fairs of folk customs and the lively lantern festival that are feasts to the eyes, Spring Festival in Xi’an also provides you a myriad of delicacies to delight your taste buds.

Steamed Bowls

Steamed bowls is one of Xi’an’s trademark dishes during the Spring Festival. It got its name from the process wherein the ingredients are steamed together within a bowl. In the bowl you can put braised chicken, fried pork cubes and braised pork balls in gravy, etc.

Guanzhong Vegetable Hotpot

Guanzhong vegetable hotpot, the most representative of the Guanzhong folk custom, is a must-eat in family reunion dinners during New Years’ Eves. In this dish, ingredients are not stewed and mixed with seasonings as traditionally done, but treated through a variety of cooking processes. It is mild in taste and refreshing in flavor.

Dumplings

Dumplings is pronounced as “Jiao Zi” in Chinese, referring to the moment when we ring out the old year and ring in the new. Eating dumplings during the Spring Festival brings auspiciousness in Chinese culture. Xi’an is well known for the dumpling feast, in which dumplings of various shapes are put together as a feast for the guests.

Cured Beef

Nothing can be better than to have a bite of red cured beef with transparent tendon. As one of the cold dishes on the New Year’s Eve dinner, it’s completely mouth-watering and you will find it hard to stop devouring it.

Gourd Chicken

Known as “the best dish of ancient capital of Chang’an”, Gourd Chicken is a famous traditional cuisine in Xi’an. It is also called “Hulun” (meaning whole) chicken in Chinese because the chicken is cooked as a whole without being stripped or sliced. Its skin is crispy, meat is tender and flavor, original. In Chinese culture, it signifies good fortune and auspiciousness.

Pita Bread Soaked in Lamb & Beef Soup

This dish is mellow in flavor, rich in seasonings and tender beef or mutton served in thick soup. The pita breads soaked in lamb and beef soup give the delicacy its pleasant smell and lead to an aftertaste that lingers long in your mouth. It‘s best enjoyed with sweet garlic and chili sauce. Rougamo

The crisp bun and the tender meat are two characteristics of Xi’an’s Rougamo. The baijibun (the bun that sandwiches the meat) must be roasted crispy and soft and the meat must be stewed as tender as possible to make a perfect combination. To have a bite of a freshly baked baijibun with juicy sliced meat will surely bring happiness to your taste buds

Biangbiang Noodles

The Biangbiang noodles is one of Ten Strange Wonders in Shaanxi because the noodles are as wide as a belt.

Jello Stew with Rice Noodles

This typical local dish features smooth and tender blood tofu (made of sheep blood). It is spicy yet delicious. You will never get enough of it.

Bangbang Meat

Having a history of over 100 years, Bangbang meat is a typical traditional dish of the Han nationality in Xi’an. It is made from pork and haslet smoked by burning sawdust.
